GROUND UP " cultivating Sustainable Agriculture ithe Catskill Region"
Today the Callicoon Farmer's Market Season began with a bang. A host of local famers selling everything from fresh cheeses, to orgainc soaps were presents as the 4th installment regional study from the Urban Design Lab(the Earth Institute at Columbia University), partnered with the Open Space Institute, CatsKill Mountain Keeper, Watershed Agricultural Council, and UPDC, was released to a crowd ready for it's comsumption. This research project covers six farms in the catskill region that are true examples of sustainability and what it means to provide food on a regional and national level. Smaller farms are making a difference in quality and quantity of food produced in the River Valley. There's no organic green washing with these farms. They are showing us Farm to Table at it's best.
